- 200 g Greek-style natural yogurt, plus extra to serve
- 12 thin lime slices (from 2 -3 small limes)
Preparation
-
Prep the Tray
Line a 12-hole muffin tray with sturdy cupcake liners. This makes it easier to remove and serve each cheesecake cleanly. -
Make the Base
Crush 8 Nature Valley™ Crunchy Oats & Honey bars into fine crumbs using a food processor or rolling pin. Mix with melted butter until the mixture holds together. -
Press & Chill the Base
Spoon the crumb mix into liners and press firmly to form an even base. Chill in the fridge for 20–25 minutes to set. -
Mix the Creamy Filling
Dissolve powdered gelatine in 6 tbsp hot water, then let cool. Beat softened cream cheese with sugar, lime zest, and juice until smooth. Fold in Greek-style yogurt, then slowly stir in cooled gelatine. -
Fill & Chill Again
Divide filling evenly over the chilled bases. Tap tray gently to smooth the tops and chill in the fridge for at least 2 hours (overnight is best) until set. -
Decorate & Serve
Carefully remove cheesecakes from liners. Top each with a spoonful of yogurt and a fresh lime slice. You can also garnish with berries for extra colour and flavour. -

Why you'll love this recipe
Looking for an easy dessert that's refreshing, flavourful and bound to impress? These delightful little cheesecakes tick all those boxes. Ideal for warmer months here in Australia, these treats provide a refreshing zest that's perfect after a day spent outdoors.
How to customise the recipe for your taste
Keen to add a touch of tropical sweetness? Stir through some finely chopped mango or passionfruit pulp into the cheesecake mixture before allowing it to set—you’ll love the burst of juicy freshness in every bite. – If you’d like an indulgent treat, sprinkle grated white chocolate or toasted coconut flakes over the top for extra texture and flavour.
Cooking Tips and Tricks
- For a perfect cheesecake base, make sure to finely crush your Nature Valley™ Crunchy Oats & Honey Snack Bars; using a food processor is ideal, but sealing the bars in a zip-lock bag and rolling firmly with a rolling pin works wonders too.
- When pressing the granola base into cupcake cases, use the flat base of a tablespoon or a small measuring cup. This not only speeds up the process but also ensures even thickness and neat layers.
- To achieve the creamiest cheesecake filling without lumps, it’s best to bring the light soft cheese and yogurt close to room temperature before mixing.
- When handling gelatine, always sprinkle it gently over the hot water rather than adding water onto gelatine. Let it sit untouched for 1–2 minutes before stirring; this allows the gelatin to bloom fully, resulting in a perfectly smooth cheesecake texture.
- Feel creative? Customise your cheesecakes by experimenting with a variety of citrus fruits available in Australia, such as mandarins or blood oranges, for a subtle twist on this tangy dessert. Adjust sweetness levels as these fruits naturally vary in flavour intensity.
- To smoothly remove mini cheesecakes from their paper cases, briefly warm the cases in your hand or let them sit at room temperature for a minute or two. This helps the cheesecake edges soften slightly, allowing an effortless peel-away.
- These cheesecakes freeze well and can be prepared in advance, meaning you’ll have a tasty and convenient dessert on hand whenever you like. Simply take them out of the freezer and let them gently thaw in the fridge before serving.
- If you’re decorating these treats ahead of a gathering, add slices of fresh fruit right before serving for the freshest taste and brightest colours.
Troubleshooting Guide
If you’re making these mini treats and find the granola base doesn’t hold together firmly, it’s likely your granola bars weren’t crushed finely enough or evenly mixed with melted butter. Try blitzing the Nature Valley bars in a food processor for a more consistent texture, and ensure the butter completely coats the crumbs—this will help the base stick better.
